Cooking Instructions for Prime Rib Roast
Heat oven to 450 degrees. Place adequate liquid (water and beef bullion) in the
bottom of the pan and cover roast with tin foil. Cook for 20-25 minutes.
Reduce heat to 350 degrees.
Cook 10-12 minutes per pound. Uncover for the last half hour.
Take roast out of the oven 5-10 degrees before desired temperature. Let roast sit on the counter for 20-25 minutes before carving.
Temperatures: Rare 120 - 130 degrees
Medium 130 - 140 degrees
Well 140 - 150 degrees
Cooking Instructions for Filet Roast
Before cooking the filet mignon roast, bring to room temperature.
Preheat your oven to 475 degrees. In a large roasting pan and rub olive oil over the meat. Place in the oven for about 12-15 minutes for 2-3 pound roast or 15-20 minutes for 4-5 pound roast.
Reduce heat to 350 and cook an additional 20-25 minutes.
Take roast out of the oven 5-10 degrees before desired temperature. Remove meat from oven and let stand (covered with aluminum foil) about 15 minutes before serving.
Temperatures: Rare 120 - 130 degrees
Medium 130 - 140 degrees
Well 140 - 150 degrees
Boars Head Sweet Slice Ham or Farmland Ham Cooking Instructions
Take note of the weight of the ham and multiply it by 15min per pound to get your cooking time.
Preheat the oven to 325 deg
- (Optional Step, if you do not want to use the apple cider you can use water, you can also choose to omit the kielbasa if you choose) Put your kielbasa on the bottom of the pan and place your rack (used to elevate the ham off the bottom of the pan) over the kielbasa. Cover the kielbasa with apple cider.
- Next place the ham on the rack and make 1” deep score marks in the top of the ham in a diamond pattern. This will allow the glaze to get into the ham.
- Cover the ham with glaze and then cover the pan w foil, make sure you save enough glaze for a second coating. Bake the ham for the time you calculated in the beginning or until you reach an internal temp of 135 deg
Remove the ham from the oven and turn the oven up to 450 deg
Uncover the ham, be careful its HOT!!! Reglaze with the remaining glaze(May not need the whole container) Once the oven reached temperature, place the ham in the oven for 15 min, take out of the oven slice and serve.
The kielbasa can be sliced to place on the table as an addition to the meal
Boneless Turkey Breast Roast
Pre-heat conventional oven to 350F, or convection oven to 325F.
Remove turkey from bag and place turkey on rack in roasting pan.
Add 1-2 inches of water to the bottom of pan.
Bake for ~28min/lb conventional
Bake for ~24min/lb convection
Ensure Turkey reaches temp of 160F or above as measured by a meat thermometer.
Rest for 20 minutes, slice, serve.
